Low carb (very very low carb)

I am thinking of going on a low carb diet and wanted to see what kind of recipes y'all have tried and liked.

Anyone else doing low carb?
 
So funny, I just started a South Beach Diet today.

We had sandwiches tonight...

Replace bread with romaine
I used....
Chicken (rotisserie cuz it's easy)
light Jarlsberg cheese
Assortment of veggies... piled high
Avocado
Marinated artichokes (for me, pickles for the DH)
And on the top we had a fried egg with the yolk cooked a little longer so it wasn't too runny.

DH had two of these I had one... calculated the calories even 362.

Also I'm making a roulade style souffle for breakfasts in the mornings... spinach, onions, ham, and cheese. Super easy to make!!!

I'm happy to share meal ideas and would LOVE to get some from you!!

I was actually listening to the radio the other day and it was call-in show with a doctor and they were talking about low-carb diets. The caller was asking how eating eggs and bacon won't result in high-cholesterol and the doctor said it was because your body burns the carbs first but when there are little or no carbs it burns the fats from the bacon. Normally high-fat is bad because your body doesn't process and burn it but stores it which causes heart problems and high cholesterol and high blood pressure and so on. Kind of cool to hear that what we used to be told was bad is sometimes not bad for you depending on your diet.
 
I did atkins 6 years ago and lost 67lbs. It was great while I was on it. Now it's all back but it was fun while it lasted! Good luck! If I lived alone I could do it all the time. It's hard to not eat what the whole family is eating.

South Beach is not exactly low carb. While it is lower than the typical way people eat, it is much higher than other low carb plans. If South Beach doesn't work for you, keep that in mind. You may need a lower carb level. Also the original South Beach diet was written with the concept that saturated natural fats are bad for you. They aren't. Even the author has had to admit that in public.

If you really want to understand the science and history behind diet recommendations and why so many people are fat today, pick up "Good Calories Bad Calories" by Gary Taubes.

It was great while I was on it. Now it's all back but it was fun while it lasted! Good luck! If I lived alone I could do it all the time. It's hard to not eat what the whole family is eating.

The family shouldn't be eating all that "carbage" either. Even if it doesn't make them fat, it does cause damage to their arteries and increases cancer risk.​

Love the recipes thanks for the link. I was off to the library to look for the good old books. And I've never worried much about saturated fats. Science changes its mind so much that I just watch what I'm eating as far as calories and then see how I feel. I check my levels every year and I'm good.

I love the SB diet because it teaches you to make good choices into the transition from the two weeks of no sugar, minimal carbs (only from certain sources) and then helps you to reintroduce them back in. Also I love the two weeks because sometimes I just need to reset my addition to bread and sugar. I'm such an addict. It's a great way to drop weight, and if you are working out it is easy to keep off. I find I only have to do it once a year to ward off my cravings and knock out holiday weight gain. There are so many yummy things at Chirstmas so I allow myself to eat it but I have to promise to work it off by May... I'm a little late this year, but it's happening. Also working out is big. I find that to really keep weight at bay I have to lift weights and do cardio. It works!

I have lost weight on a low carb diet before. Ihave a sweet tooth so that was a problem the last time I did it. Here are a few desserts i ate .

Sugar free jello with real whipped cream.

Cream cheese mixed with a sweet n low.

I remember eating alot of salad and pork rinds.

Cool whip is mostly chemicals. Land-O-Lakes makes a REAL whipped cream that is sweetened with splenda. It's delicious!​
