Katie's digestion has reverted to not great without the support of the stimulants. I wonder if something other than zinc toxicity is making her sick.

I would wait another day or two before worrying. Psyllium helps the digestive system to produce better poops so she might need a bit of time to re-adjust.
Your chickens poops are great by the way ! Mine never look as good .
