My fridge runneth over

I posted an ad on Craigslist selling them for eating or hatching, same price -- lots of people jumped at the chance to get hatching eggs for $3 a doz. The first person to contact me wanted 5 doz, the next wanted 2, and the next wanted 2... (and somewhere in there I got two in my own bator)

Today someone wanted 4 doz for next weekend but changed his mind when he realized it would take nearly a week to collect that many. Even with the girls pulling double duty (or so it seems), the best I've gotten was 10 eggs from 12 hens.

My eggs are piling up right now too! I gave a dozen away to our neighbors today, and it sounds like they will start buying them from me....woohoo!

To use up eggs we'll make quiche and hard-boil some for salads, etc. And there's always egg nog!

We found a recipe that uses a dozen....we've made two batches over the holidays and it tastes great - just like store bought!

I got rid of a whole dozen last week just making a jar of pickled eggs. They were supposed to be ready for the Colts Super Bowl game.....wonder if they'll last until next year?? lol

I'm also all about donating to the local food pantry, if they can take them. I love that idea! I don't have enough to do that but if I had 10 dozen laying around, I definitely would if I couldn't sell them all. Things are tough all over the country right now. Help your neighbor.

I contacted a food closet and we're making a deal. They'll give me empty cartons and I'll drop them off full!

We're getting ten eggs a day and we only need about ten a week!! I was on here last week looking for help with this problem and this was one of the suggestions. The guy at the food bank was happy to get fresh eggs!

Don't forget to keep track of what you donate and deduct its value on your income taxes. Just think, at $2.50/dozen deducted value, if you donate 2 dozen a week, thats a $260.00 charitable deduction in a year.​
 
We are here in central indiana and yes we sell them for $3 a dozen - we are about 20 miles east of Indy. That was a nice henhouse and run you have - no shame in making some cash to pay for that and feed - better yet if you made enough money you could expand the hen house and run and get even more chickens!

We recently acquired 6 RIR hens. At first I wondered what 3 of us would do with that many eggs. Well, now we can't make eggs fast enough! One neighbor told another told another... We have 6 envelopes hanging on the fridge door as I speak (teenage daughter made up payment envelopes for each family so we can keep track of who gets the next dozen) I actually have to ask my daughter to set aside osme for us when I need them for cooking. She's finding the egg selling business to be a great way to put gas in her car for school. I haven't had to give her an allowance since the chickens came along!

I like the donation idea...may do that when some of my school colleagues aren't buying eggs over the summer (I won't see them once school lets out) and we will probably be overwhelmed again with eggs.
 
When I get a surplus of eggs.... I scramble the oldest dozen and cook them.. shells and all. They love the treat!

lately though, it has only been duck eggs that I have done that with.
And right now, I have no extras to do this with unless I find a cracked one while gathering the eggs. Or accidentally crack one.
