Second rise... I made my slightly larger than your golfball sized hunks. It just happened naturally, I didn't mean to. I ended up with 16 rolls.

Those rolls sound wonderful. Id rather have rolls than a whole loaf of bread, I think. Do you think they would freeze well? Thats waaaay too many rolls for me at once.

I would freeze them after their first rising and then thaw and let rise the second time then bake and they would be like fresh! dh wouldn't let me make these rolls last night as he said we had to finish off the cinnamon rolls first so we wouldn't have a lot of waste

For good rolls use good quality bread flour.
