Tsc was selling chicks labeled Sapphire Gem Pullets but I think this one looks more like a Barred Rock and now I'm not sure it's not a cockerel. First pic is at five weeks

Yes, there is definitely something wrong with that label for that chick.

Sapphire Gem cockerels have white barring.
Sapphire Gem pullets do not.

I agree the chick looks male.

If it has blue feathers with white barring, it is probably a Sapphire Gem male. If it has black feathers with white barring, it is probably either a Barred Rock or a Black Sexlink male. (I cannot tell in the photo whether it has blue or black.) A Black Sexlink male will grow up to show some red as well, but a Barred Rock male will only have black and white at all ages.
 
Black Sexlinks and Sapphire Gem cockerels only have one copy of the barring gene while Barred Rocks have two. He looks to be a Barred Rock cockerel by the lightness of his barring.
