New to all this, scared birds

Yes, I have two dogs so like you say its just getting used to the different behaviours.
Can you recommend any good treats?

Meal worms, scratch grains, fresh fruits and veggies. Mine are especially fond of the scratch grains. I started off with buying meals worms and then a special chicken treat mix that had meal worms and other things in it but quickly realized that what mine liked in that special mix were the grains. So being practical and thrifty I just started buying them a large bag of scratch grain. It is fun to watch them peck around on the ground when you toss it into a patch of weeds or grass. :)

I'm pleased to say that after introducing my other four last night, all six are much calmer this morning.
I'd laid newspaper under the straw (bad idea). I was able to go in and collect it all, and we put an indoor catch on the door and they were fine!

I really appreciate everyone's help and advice, thanks for being so friendly.

That's great!
I was thinking that adding more birds might increase your problems.
Cover anyway they can get out of coop and run, keep them confined and safe.
I would not want my neighbors chickens in my yard, they can be destructive and 'messy'.
It's just common courtesy to keep your animals contained.
