Breakfast Pizza

1 lb.
frozen shredded hash browns, thawed
6
large eggs, divided
2 c.
shredded cheddar, divided
Kosher salt
Freshly ground black pepper
6
slices bacon
Freshly chopped chives, for garnish

  1. Preheat oven to 400° and grease a large baking sheet with cooking spray. In a large bowl, stir together hash browns, 2 eggs, and 1/2 cup of cheddar cheese and season with salt and pepper.
  2. Transfer hash brown mixture to a prepared baking sheet and, using your hands, pat into a circular crust. Bake until golden, 20 minutes.
  3. In a large nonstick skillet over medium heat, cook bacon until crispy, 8 minutes. Drain on a paper towel-lined plate, then chop.
  4. Top baked crust with remaining 1 1/2 cups cheddar cheese and crack remaining 4 eggs on top. Scatter bacon over everything and season with salt and pepper.
  5. Bake until egg whites are set but yolks are still slightly runny, 15 minutes. (If you prefer a less runny yolk, bake 18 to 20 minutes.)
  6. Garnish with chives and slice.
Made this recipe with my first few chicken eggs, I didn't have quite enough so I had to use store-bought. I was so excited when I could tell the MAJOR difference. (I also got a few double yolks) Also, I doubled the recipe.

This recipe was perfected a little. But its perfect for dessert.



Custard:

Ingredients:
1. 2 yolks
2. 1 egg white
3. 2 1/2 cups of milk
4. Some sugar...depends on what you like. I recommend about 1/4 a cup of sugar and another 1 cup to make caramel
5. Aluminum foil

1.) First step is to mix the eggs together.
2.) Then use 1 cup of sugar to make caramel (I personally like to skip this step) but if you want to do it, pour the caramel into cups. The recipe makes 3 cups of custard.
3.) Add 1/4 cup of sugar (or what you prefer) into a a few drops of hot water to melt. Then add this to the milk.
4.) Mix the eggs with the milk mixture and sift until smooth
5.) Pour the milk/egg mixture into the cups with caramel.
6.) Steam the custards and cover with foil. Steam for about 10 minutes or until ready.
 
Banana Brownies
INGREDIENTS :
1/2 CUP BUTTER
1 CUP SUGAR
2 EGGS
1 LARGE BANANA (MASHED)
1/2 CUP ALL PURPOSE FLOUR
1/3 CUP COCOA POWDER
1 TSP VANILLA
1/4 TSP SALT

1/2 TSP BAKING POWDER

DIRECTIONS :
PREHEAT OVEN 350° GREASE AND FLOUR 9X9 SQUARE PAN.
MELT BUTTER IN A SUACE PAN MIX IN SUGAR UNTIL DISOLVED .
IN LARGE BOWL MASH BANANA MIX IN EGG , SLOWLY ADD BUTTER/SUGAR MIXTURE TO TEMPER EGGS ONCE TEMPERED ADD THE REST OF THE BUTTER/SUGAR MIX.
POUR IN THE REMAINING INGREDIENTS MIX WELL AND POUR INTO PAN .
BAKE 25-30 MINS LET COOL AND ENJOY 🥰
 
I love this next recipe for breakfast.

Ingredients:

1. 3 eggs
2. 1/3 cup of flour
3. 1 cup of chopped onions
4. A cookie cutter
5. A pan and oil
6. Spatula

1.) First, mix eggs and flour together.
2.) then heat up the pan and oil it down. Place the cookie cutter into the pan. I prefer to use a 2in. diameter one, that's a circle.
3.) This recipe makes 6 slices so 2 slices per egg. Pour in some batter into the cookie cutter.
4.) Remove the cookie cutter and flip.
5.) Repeat until there is no more batter


Fact: If you use coconut oil and don't add onions this recipe is doggy friendly.
 
Awesome, addictive, meringues:

2 egg whites
1/2 cup fine sugar
Pinch cream of tartar
Pinch salt

Preheat oven to 225ºF. Line a large cookie sheet with parchment paper. Place both egg whites in a completely dry, clean, bowl with cream of tartar and salt, and beat until bubbles begin to form. Add sugar, a little at a time, beating well after each addition, until the mixture holds peaks and is glossy and thick and most of the sugar has dissolved. Pipe onto the cookie sheet in the shape of large Hershey's Kisses, and bake in the preheated oven for 1 hour.
Note: Depending on your personal preference, you may want these crispy. They are chewy when taken out after one hour. For crispier meringues: follow above instructions, but when baking time is done, TURN OFF heat and let meringues sit in the hot oven for an additional 1/2 hour (or however long suits your needs). Enjoy!

Fanny Farmers Banana Nut Bread revised

Prep Time: 10 min Cook Time: 60 minutes Total Time: 1 hr, 10 min Servings: Serves 6
Ingredients
3 ripe bananas
2 eggs
2 cups flour
3/4 cup sugar (regular, or turbinado works fine, too) 1 teaspoon salt
1 teaspoon baking soda
1/2 cup nut meats, coarsely chopped (I use a handful of sliced almonds and
pumpkin seed)
opt: blueberries SEE Tip 2

substitute GF straight 1:1

Directions:
Preheat oven to 350*
Butter 9 by 5 loaf pan
Mix in a bowl 3 ripe bananas, well mashed, and 2 eggs, beaten until light.
Sift together 2 cups flour, 3/4 cup sugar, 1 teaspoon salt, and 1 teaspoon baking soda.
Add to the first mixture.
Add 1/2 cup nut meats, chopped.
Stir well.
Put in a buttered loaf pan 9 by 5 inches.

Bake 1 hour at 350 degrees Fahrenheit (176 Celsius).
The bread is delicious served warm, with a butter dish nearby. It makes a nice breakfast quick bread or snack. It keeps well for 2-3 days, and is very nice toasted.

Tip #1: I have substituted homemade applesauce for a portion of the banana puree when I was short on bananas with excellent results. You can also add an extra egg with great results.

Tip #2: If you like especially nutty breads, use one cup instead of 1/2 cup nut meats. I also usually double the nuts (actually, I think I use even more than a cup) because I love walnuts.

Tip #3: I often have substituted 1 cup or even all but half a cup of the all-purpose flour with whole wheat flour with delicious results. I tried it with half buckwheat flour this last time, and that worked out nice, too. I tend to add a bit less sugar (about 1/2 a cup, usually) with fine results. If using GF bread takes about another 10-15 minutes

Snickerdoodles
Prep Time: 45 min Cook Time: 15 min Total Time: 1 hr, 15 min Difficulty: Medium Source: Arlene Thomas Ferguson
Traditionally snickerdoodles from Grandma (I add vanilla & cinnamon with eggs & sugar)

INGREDIENTS
Pre-Heat oven to 375

COOKIES
2 C butter, softened 3 C sugar
4 eggs
5 1/2 C flour
1/2 tsp salt
4 tsp cream of tartar 2 tsp soda

COATING/GLAZE
4 tsp cinnamon 4 T sugar

DIRECTIONS
Cream butter, sugar, eggs until fluffy. OPT add cinnamon and vanilla
Add flour, Cr of Tartar, soda, and salt. Blend well.
Refrigerate for 30 minutes.
Combine 2 T sugar and cinnamon. Shape dough into balls, and roll in cinnamon mix.
Place in ungreased cookie cookie sheet
Bake 12-14 minutes. Will puff up and then flatten out.

:celebrate:loveI love to beat a few eggs with grated cheese and whatever veg is needing to be used grated or diced too.

My favourite is
About 6 eggs
A grated zuccini
Grated carot
Diced red & yellow capsicum
Sliced spring onions or
Red onion or any onion diced
Mersey valley pepercorn cheese
Tasty cheese or any cheddar whatever you have really besides mozzarella
Maple glazed streaky bacon cooked slightly and diced... drain the the fat off into a pie dish to grease right up and all around
Mix all ingredients into beaten eggs to combine
Add salt and pepper to taste
Even a splash of worcestershire sauce and a dollop of cream
Pour into greased pie dish
Cook on 200c for about 45 minutes
Sorry this is a guess as I don't follows recipe's but omg it is delicious and so versatile you really can add whatever to the eggs milk/cream and cheese
