Ended Official BYC Valentine Puns Contest Series - Egg Me On Recipe Contest

Recipe 1: Open Faced Egg Salad Sandwiches - I like open faced sandwiches, fork and knife style. The ham, while optional, adds a slightly salty punch, but you can skip it if you don't eat meat/pork.

INGREDIENTS

6 eggs
2 Tbsp mayonnaise
½ Tbsp Dijon mustard
½ Tbsp dried dill
1 stalk celery, chopped
3 sweet pickles, chopped (or 1 Tbsp sweet relish)
diced ham (optional, I usually use about 2 oz)
6 slices sandwich bread

PREPARATION

Hard boil eggs. Set aside to cool down, then peel and roughly chop.

Mix eggs with remaining ingredients minus the bread. Cover and chill, then serve open faced on lightly toasted bread.

Makes 3 servings.

Recipe 3
Breakfast Casserole
INGREDIENTS
2 pounds pork sausage
12 eggs
1 cup sour cream (light or regular)
1/4 cup milk
salt and pepper
4 green onions
1/2 green bell pepper , diced
1/2 red bell pepper , diced
2 cups shredded cheddar cheese

DIRECTIONS
Preheat oven to 350 degrees. Spray a 9x13’’ pan with cooking spray.
Combine the eggs, sour cream, milk, cheese and salt and pepper in a large bowl. Mix on low speed with electric mixers, just until combined.
Heat a large skillet over medium heat. Add sausage and cook until browned, breaking it into small pieces with a wooden spoon as it cooks. Drain most of the grease and add the sausage to the bowl with the egg mixture.
Add the bell peppers and onion to the same skillet the sausage was cooked in and sauté for 2- 3 minutes. Add to the bowl with the eggs and stir everything to combine.
Pour mixture into greased 9x13’’ pan and bake for 35-50 minutes or until the edges
are set and the center is just barely jiggly.
Leftover egg casserole can be stored in the fridge and enjoyed within 3-4 days. Leftovers are delicious reheated in the microwave.

Well one of my favourite recipes are English Pancakes! To make this my way substitute the 1 chicken egg with 4 quail eggs! I find they are a nicer spongy texture with quail rather than chicken

You need:
3/4 cup plus 2 tbsp (100 g) flour
1/8 tsp salt
1 chicken egg (or 4 quail eggs)
Mix this all together until you have a crumbly mixture(this is important to get smooth pancakes!)

8oz milk
Now slowly add your milk and mix together until you have a nice liquid batter with a few bubbles visible.

Add some butter to your pan, once melted pour in some batter and cook them until they are firm in the middle, flip and remove from the pan once the flipped side has some nice brown spots

lemon wedges and sugar, to serve!

I'm sitting here looking at all of these amazing recipes drooling! I'm waiting for pizza delivery because I was so busy I didn't even make dinner! 8pm rolled around really quickly! I'll know where to take applications for my personal chef once I'm famous, lol!
 
Pavlova is one of my fav desserts. I use this recipe from allrecipes for more than 10 years. This is the first one I made and I have been hooked since.

  • 4 egg whites
  • 1 ¼ cups white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • 1 pint heavy cream
  • Berries or kiwi

  • Step 1
    Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper. Draw a 9-inch circle on the parchment paper.
  • Step 2
    In a large bowl, beat egg whites until stiff but not dry. Gradually add in the sugar, about 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy. Gently fold in vanilla extract, lemon juice, and cornstarch.
  • Step 3
    Spoon mixture inside the circle drawn on the parchment paper. Working from the center, spread mixture toward the outside edge, building edge slightly. This should leave a slight depression in the center.
  • Step 4
    Bake for 1 hour. Cool on a wire rack.
  • Step 5
    In a small bowl, beat heavy cream until stiff peaks form; set aside. Remove the paper, and place meringue on a flat serving plate. Fill the center of the meringue with whipped cream, and top with fruit.

Homemade Ice Cream in cuisinart machine

2 eggs -beaten for 6 min

Add 1/3 cup sugar
1/3 can of sweetened condensed milk

Beat well

add 2/3 cup Fruit (bananas or fresh peaches)

Start spinning mixer THEN pour in ice cream mixture. Add 2-3 Tblspn vanilla. Mix for 25 min then move to freezer.
