***OKIES in the BYC III ***

For those of you with an abundance of produce here is a summer favorite of ours. Persian Salad. Cucumbers, remove seeds, dice with skin on. Equal volume of tomatoes, remove seeds and core, dice with skin on. About half the time I will add some diced onion, really like onions. Dressing: Lemon juice, extra virgin olive oil, chopped mint, dried or fresh, salt and pepper to taste. I am generous with the lemon juice. Dried mint can be hard to find but Whole Foods has it. I was well into dinner prep this evening when I discovered I was out of mint so I used some mint chutney, it is in the ballpark and still refreshing.

The chickens got the cucumber and tomato scraps as a cool afternoon treat.

ooo... good idea! going on the to do list :) there's only one vet I know of near the city that handles reptiles and I heard he retired, so I was wondering where I'd start trying to find another one. Thanks! Wouldn't have thought of that!

Nanakat - If I can find the article on the corn I'll post it too. Really interesting read.
I used to keep all sorts of exotic frogs and I used Dr. Henderson at the Britton Rd Vet. It's in OKC, but he is amazing. I know it's weird, but he saved a couple of my frogs and one of my lizards. He was referred to me by several vets that treat reptiles but didn't know what to do with my frogs. I live in Noble now. When the day comes that I get exotics again, I will go back to him. Don't know if that helps at all.
 
Oh! I got eggs again today! I haven't seen eggs out of my Dominiques in over a month. I was starting to wonder if it was all the snakes, or if they had started eating their eggs. But first whole day in the new coop, and I got EGGS!

That sounds yummy. Wonder if it would be good with some kalamata olives sliced up in it?

I make a couple of things w/ dried mint too, If you go to the tea section and get "mint medly" it is important to get that one it has no tea only 3 or 4 diff. types of mint leaves. Way easier and less expensive then dried mint in the herb section (when you can even find it)

Dr. Brad Minson D.V.M. [email protected] 405-752-0077 is the medical consultant for the Oklahoma Herpetological Society. He's really nice too and runs a snake rescue.
