For those of you with an abundance of produce here is a summer favorite of ours. Persian Salad. Cucumbers, remove seeds, dice with skin on. Equal volume of tomatoes, remove seeds and core, dice with skin on. About half the time I will add some diced onion, really like onions. Dressing: Lemon juice, extra virgin olive oil, chopped mint, dried or fresh, salt and pepper to taste. I am generous with the lemon juice. Dried mint can be hard to find but Whole Foods has it. I was well into dinner prep this evening when I discovered I was out of mint so I used some mint chutney, it is in the ballpark and still refreshing.
The chickens got the cucumber and tomato scraps as a cool afternoon treat.

there's only one vet I know of near the city that handles reptiles and I heard he retired, so I was wondering where I'd start trying to find another one. Thanks! Wouldn't have thought of that!
