WOW, all of you in central Oklahoma, be sooooo
careful in all that water !!!! Those rainfall totals
are unbelievable. They have had a lot of rain
in Tulsa and several roads closed, but not like
the totals from Oklahoma City.
Is cloudy and grey here, but no rain yet. Will
be a good day to fire up the oven and bake
banana bread.........tons of banana bread.
A friend of Pa-Pas "blessed"(?) me with just
shy of a CASE of bananas............ Will reserve
my "thank you" until I see just how big a
mess this becomes......LOL

By now, you may have it all baked, but for "next time" I have a few suggestions for how I have made banana bread for more than 30 years. 1) mash the bananas and measure them into the quantity that you normally use in your recipe. Freeze the mashed bananas in plastic ziplock bags, labeled with the quantity and then dump them into the bowl when you are ready to make the recipe. The bananas will freeze well and may turn a little brown, but will be fine in a banana bread recipe. The secret is to smash well so you don't have a lot of air pockets in the plastic bag. OR 2) make up you banana bread recipe and then freeze it in ice cream buckets or cool whip containers - uncooked. Cover the batter with plastic wrap to help prevent freezer burn. When you are ready to bake the banana bread, scoop out enough to fill your pans to the right depth in the loaf pan and stick the rest of the batter back into the freezer. I start the frozen dough - usually in clumps from the spoon I dug it out of the frozen bowl - in a cold oven to help it thaw before it starts baking. When you do it this way, you have "fresh" banana bread each time instead of thawed banana bread - so the outside texture of the bread isn't the clammy texture that I can't seem to avoid when I thaw out baked bread. The unbaked banana bread will keep in the freezer for a year (or longer if it is the kind of freezer that doesn't self defrost)
