Luvs-the feta can be kept in a milk or brine bath for several months. The milk will actually take out some of the 'salty' but don't freeze it. There are tons of ways to use it, just depends on what you like to eat. Try http://www.supercook.com/ just enter feta in the add box, and whatever else you would like to eat with it and it will give you some recipes ideas. The more items you enter, the fewer recipes it will give to make your search easier. I like to cut up fresh tomatoes, onion, basil, oregano, and add crumbled feta with a bottle of italian dressing. Now you're making me hungry!
