My hubby makes what he calls "Beef and Beans." He's a bit of a chili snob - real chili doesn't have beans.

He makes a quick and easy chili recipe.

1 large can of Ranch Style Beans
1 lb ground beef
1 diced onion
1 pkg onion soup mix
1 can diced tomatoes
1 can tomato sauce
chili powder to taste
garlic powder to taste

Brown the beef and stir in the onions. Season with a tiny bit of salt. When the onions are tender, add remaining ingredients. Simmer for about half an hour. This makes enough chili for hubby and I. We usually have macaroni with it (yeah! We're having chili mac tonight!

) and LOTS of shredded cheese.

You can increase the proportions depending on how many people you are feeding.

(It actually makes a bit more than we can eat. Hubby doesn't know I've caught him "sampling it" during the day!)

We just got home from the hospital about an hour ago. They finally let Gerald come home from the hospital today!

The test results came back .... the meningitis is viral and is not contagious! That is great news! Dr wants him to stay away from work til he sees his regular Dr on Thursday though.

I'm doing better now that Gerald's home. I think the stress was getting to me. Now I have my buddy back! He's out collecting eggs right now.

Oh, and it's our anniversary today too!

It is good to hear that Gerald is home.

I hope he continues to heal. Tell him not to push it or he may end up back in the hospital.

Congratulations on your Anniversary and maybe Gerald could get you some EGGS!!

I copied the wrong quote!

Until we got married (31 years ago next week!

) I'd never heard of chili without beans either. The only time we ever had chili without beans was when we had it on hot dogs.

Then, on the food channel, I learned he was right - real chili doesn't have beans. Of course, after the chili is judged at the cook offs, beans are often added to stretch the chili. Go figure!

Lets see ... I just need to start looking at craigslist now to see if there's a goat or llama or two to get for my anniversary present to Gerald!

Lol don't know if yall'd know me or not. Yeah, I like the people here a lot, so far this is the best forum I've been on.

I have to agree. This is the best forum I have been on. I have noticed everybody here is so nice, supportive, and make for good listeners when you need to talk to a friend.

Has Gerald used his insurance before?

Government Insurance does some really cool things with medical bills. I've seen a $12K hospital visit slashed to $500 out of pocket expense. I think you will be greatly surprised when you get the bills.

Oh, Happy Anniversary!
