You can donate the spoonbill eggs to ODWC. They make caviar and sell them to high falutin folks.
I have never caught one but I have seen some others have caught.

I was in a boat that had a snake get in it...everyone else dived out and I rushed the snake! well...they said i pushed them out but they were gonna hit it with the oar!

Doc

Doc - I don't think I have ever attended an auction where the auctioneer didn't know my number by memory before half the auction was over. This evening, I didn't realize how much "fun" I had until I went to check out and couldn't remember what all I had purchased. I had totally forgotten about buying the blue splash Americauna chicks and the trio of splash marans.

I was impressed with the variety of hatching eggs that were for sale. I will be curious to learn what kind of pheasants hatch from the eggs you bought. Is it a regular thing that you have button quail eggs at the auction?
 
Monty we have a ODWC cleaning station that opens up during spoon bill season that will clean them for you and wrap them and freeze them free of charge as long as they can keep the eggs, me personally I use the eggs for catfish bait and as far as the caviar I will pass doesnt sound the least bit appetizing!!

They say that next to Baluga it is the best there is.
I have eaten caviar a few times and I like it but it was the cheap kind. Probably made from carp eggs or something.
