Salt is added to the water to increase the temperature it boils at.

Acid (vinegar or lemon juice) is added to start dissolving the egg shell making it softer and more pliable.
Adding vinegar or lemon juice may help to peel, but it did not help in my experience. It doesn't effect the properties of the egg that you eat - not even if you're feeding it to your dog. I don't add salt to water either, but the amount of salt need to be effective to raise the boiling point would be too much to actually cook with. Most people use very little salt and the difference is negligible as far as boiling water is concerned.

Want to know what works for me? Using the instant pot for 6 min. It's basically steaming the eggs as @Kiki mentioned earlier. It makes perfect easy to peel hardboiled eggs.

I dono about green balls, but very much looking forward to smoked trout for Thanksgiving at Rockbridge Lodge. If you are in or near SW Missouri, google it and get your reservation in. :drool:drool:drool. After dinner (it's a buffet, and yes they also serve turkey and probably ham too), you can walk down to the tanks and admire the foot-long trout and think that maybe next year you'll bring your fishing pole and pay for the privilege of casting a line in the stream.

ETA: not to hijack the thread, I think they also serve delightful deviled eggs. 😉
