Ground beef is not usually the grade you want to cook less than medium well. The surface area allows too much bacteria to infiltrate the meat. Most places aren't going to police their grinding, burger patties are not the same as tartare.
No, but they are as tasty as a well seared med-rare steak.

I butcher my own beef. So I know what went into it. I'll also eat a med-rare burger from a few restaurants. I won't eat a gray burger though. So if I don't trust the source- I won't eat any burgers.

You know, while we are BS'ig.
Take top round, it's a lesser quality of meat I know, take chicken breast, mix them 50 / 50 and run the through a grinder and make hamburgers out of them. Raw they look horrible to muggles because the lighter chicken looks like fat, so it looks like a fat burger.

Chicken is sticky, so it's a great binder, put them on the smoker with a bit of hickory and theburgers are just stupid good, and MUCH healthier for you too! some aged cheddar and you are on your way to heaven.

I have not thought to smoke burgers... I smoke eggs though! Makes some really interesting and unique deviled eggs!
 
Are you not familiar with the tangy zip of miracle whip? 🤣
I wouldn't call it spicy but it does have a zing or *zip* to it that Mayo does not have.
Thank God you didn't call it spicy.
I would have had to call Sapphire in with her blades to cut your head off!
 
Well, I agree for the most part, you can experiment with the type of pepper, Datil works, Serrano or Longhorn is another good pepper, garlic of course. Easy on the salt though, and the pepper TBH many pepper the hell out of it, I don't want to taste your pepper, I want to taste the flavors of the meat already !!
