Recipe suggestions, please

My geat grandparents were from Norway, it's a traditional food there.

My aunt used to make it every Christmas and it was always my favorite part of the meal. She would make meatballs and gravy and we would wrap them in lefse like a little burrito :drool so good!

Ok. Here's the base recipe I used. I made a double batch. I pushed up cummin to 1TBS doubled oregano and used 2 tsp of black pepper. Also added a tsp of chipolte. This was for a double recipe. Used my home ground whole wheat flour, my vegetable stock and my home canned tomato paste. With a double batch I was able to do one cake pan of enchiladas.
 
@rjohns39 thank you for sharing! I'm sure homemade stock and tomato paste really makes the recipe. I like the vegetable stock idea too. I wonder what that would taste like in the green sauce.
Do you roast your vegetables before you make the stock?
