I just noticed one of our roosters has a swollen tongue. Could he have injured it. See attached photo.

Do you have another rooster who might have pecked him? Look carefully for any hair or string that might be wrapped around it. Those can wrap around and be swallowed causing circulation of the tongue to be cut off. A sting could also be possible. Offer him water often. Benadryl 1/2 of a 25 mg tablet given once orally (if you can get it down the back of his throat) could help if there was a sting. Is a vet an option? They might give him a steroid shot to reduce swelling.

Could have been pecked. He lives with another big rooster and a small one. Looks like there is a scab on the end of he's tongue.

Most injuries or peck wounds heal in time. The important thing is that he could die from dehydration if he doesn’t get enough to drink. Poultry NutriDrench from your local feed store can be given as a vitamin/electrolyte/ mineral boost—2-3 ml daily giving orally. During his time with this problem, try tempting him to eat with scrambled egg, canned tuna , ground meat meat, and watery feed.
