Salted duck eggs??

I just tried the vietnamese style, which includes herbs and spices on the brine, It is better tasting and more flavorful.
I have not read through the whole thread (yet!), but we love salt cured duck eggs. Cured in the fridge and then into the dehydrator. Then grated over pasta. Mmmmmmm :)
 
I have to admit that i dropped the ball on salted duck eggs. 😊
My wife doesn't like them, she says they're too salty and taste different than eggs (is that not the intention of making salted eggs?)
But the toughest blow against producing home-made salted duck eggs came from the Asian Supermarket: They sell ½ dozen salted duck eggs from China for just $8. it would be hard to compete with them and the store owner is only willing to pay me $4 per ½ dozen.
I sure will make some salted eggs for myself from time to time , but it is not a business idea for now…

Have you tried just curing in salt (and other spices), then dehydrating and then grating over pasta? The richness of the duck egg is amazing. It's become kind of a thing at several high end restaurants.
 
As it happened, today i found some red food color in a local supermarket…
I know that the shells of salted eggs are dyed red or pink, are they adding the food color to the brine or are they coloring the salted egg? - I just don't want to color the whole egg…

Generally they are colored so that they can be distinguished from "regular" eggs. At least that's what I've been told when in the Philippines. Itlog na pula.
