Without necropsy it's hard to say what happened. Other injuries that were not obvious, or perhaps another underlying condition that the stress aggravated.
I'm very sorry for your loss.
It seems as though she fell on her back while I was at work and wasn't strong enough to get back up...she was laying on her water dish. There were signs of a struggle: pine shavings were strewn across the room. She was already stiff by the time I got home, she likely died from suffocation trapped on her back in her weakened state...
 
I think that what happened was probably what people call 'death throes". It's a neurological response the body makes to dying. They will sometimes thrash around., which is likely why it looked like there was a struggle. They will sometimes thrash their legs or flap their wings.
I've seen it happen, it can be unpleasant to watch, but usually doesn't last very long.
