I do not know what to do other than vote with my pocket book and boycott products and ingredients that are part of the problem. I also will fill the ear of anyone who will listen to me rant on the evils of industrial agriculture..

This is a bit on and off topic.. but I started the topic so hopefully the Modlies will let it slide...

Talking about buying beans, rice, etc in bulk... reorganizing time... etc.

Has anyone cooked a huge vat of beans or rice and then frozen it into useable portions?

Beans especially take a while to cook so if it could just be defrosting instead maybe it would inspire folks? On their day off, when they've got the time... I've done that with meat loaf (always cook up two and we only eat 1/2 of one at a go)... with soups... etc... but I've never tried just straight beans or rice... any tips??

Canning too, I'm just getting started in that... so recipe welcome there too... but most folks I know don't can, quite a few have looked at me like I'm nuts... but PLENTY have a freezer ... with their fridge or even a spare freezer only one... like mom... if I could give her a simple way to freeze up batches and they'll still taste good and have good consistency... might go a ways to converting her. OHHH what about freezing cornbread... Mom LOVES beans and cornbread w/rice... but with it being just her, and uncle right now a whole pot is just too much.

Any advice on that note is appreciated... or OTHER foods that are good for cooking in bulk and portioning up...

Freezing beans is easy. I cook up a bag in just the normal way then freeze them with a bit of the juice in 2 cup portions in freezer bags. This year I froze green beans and tomatoes instead of canning them, too. The green beans I blanched and cooled in ice water then drained them well and froze them on cookie sheets then packed in freezer bags. Tomatoes I do two ways: the first I blanch and peel and cool then put into freezer bags or I slice Roma tomatoes (unpeeled) and freeze on cookie sheets then pack into freezer bags.

just the bean juice.

most of the time I use them to make refried beans. But the frozen beans can be used for anything that the canned beans can be used for. It's quick easy and cheap. I'm all about quick easy and cheap.

A group of people here have found a organic grain and flour supplier. You can only buy in large amounts. So they all chip in together and buy in bulk and spend a day weighing and dividing it up between them.

I have tasted bread made from organically grown red fife wheat ground into flour. I dream about that bread,

I have been saying for years that it is cheaper to eat junk food than natural products and everyone always tells me I am wrong. Well, I am NOT wrong. Healthy, whole grain, natural foods are expensive. Bread for example. A loaf of store brand wheat bread is about $1.99 in these parts. High Fiber, naturally whole grain bread is $4.79. A can of peaches is $.79 but buying enough fresh peaches to can your own is $2.99 per lb. Margarine costs $1.79 and real butter is $3.99.

I could go on an on. Back when most families only had one parent working, it was feasible to have a garden and grow your own stuff. In todays world of two income families, it is tough to do.
