Thanks Jamie... Mom's up in Ark right now helping Pepaw clean out the house... we're talking 50 years worth of Memaw's hording... she collected EVERYTHING... once I tried to count her clocks and lost count somewhere in the 80's... or how about the instruments... she had a hundred, the vast majority of which were electric guitars... and yes, my Great Grandmother could play them... but those are gone thanks to greedy money grubbing relatives... I'll stop now before I get cranky, again. But anywho, talked to her Thursday and she said she's already set aside like four cases of Ball Jars for me!! Only thing I recall Mems canning was plum jam, she had plum trees on the property, but it doesn't surprise me in the least that she's got four cases... that's just Memaw.

Raw Milk, my preference... but getting it is tricky because you have to buy it AT the farm... and I'm smack in the middle of DFW... irony that being next door to Cowtown makes it impossible to have a cow no? The milk I've found though... holy toledo it was GOOD! We did a taste comparison... store bought Organic and the Raw in identical not see through cups and all four of us could tell which was which... VERY easily... the texture and the taste are just so much better.

And knowing exactly where the milk came from, that the cows are well cared for, healthy is so nice. And knowing that it only traveled X miles to get here... kept ice cold the whole way... that's great as well. Being able to see the cream line is just very cool. Overall very happy that I found a source. Not scientific, I'm not a biologist or a pathologist or anything... but based on my senses ... sight and taste, and my knowledge of production and transportation I'm very comfortable with my choice.

As for unpasutrized milk. We grew up drinking unpasturized milk and my family for generations drank the same. I would feel comfortable drinking raw milk from my own cows but not too sure about other people's cows. You have to be very clean and meticulous.
My Sister-in-law is from Europe. He was amazed at how long milk stayed fresh in North America. When they buy milk in Europe it will keep for max four days and then starts to turn.
I wonder why that is? lower heat for pasturization? I have no idea.

Paula I have the same reaction... Hmmm, maybe when the body is not poisoned, by chemicals and processed foods it is more sensitive to garbage?

Seriously though: Did the chemical/processed food engineers ever think they may not be getting it right!!!!!!!

I want to see one of them break down a grain of wheat into all the different components, then put it together again and have it sprout and grow........
THEN and only then will I begin to think they have any clue of what they are talking about when it comes to healthy and safe...

Working with natural factors is the basis of organics. Insuring healthy levels of good microbes is the only sure fire way to prevent bad microbes. It is a balance it is how mother nature does it.... I for one think mother nature is smarter than the folks that work whatever big ole junk food company...

But the raw milk we get once a week, and holds fine for that 7 days. If it somehow sits longer than that (rare, it's usually long gone) I just use it in recipes, things like pancakes. Do you know if your in-law is talking about raw or cooked milk? I was under the assumption that raw milk is more popular in Europe.
