If it is very high though, then have landing pads so they can hop their way up.

I have found an 18 inch hop is easy for all of my birds, but not more than that.
I'd prefer to have the boards high enough that I'm not bending over much to clean them. (I have arthritis in my spine.)
Maybe I'll add a ladder. Or a miniature escalator!!

Yes! It is nice if the person cleaning doesn't have to bend.

A ladder should work well, and could be pretty steep while still being usable. A few steps, and landing areas could work too.
 
How high off the floor should the poop board be? I'm thinking a 2x4 edge would give them something to jump/fly up to on their way to the roost.
I put poop boards about waist high ~30-36" off floor, roost is 8" above board.
Bottom of nests are about 24" off floor.
Ramps go to 16" high 'platform'.

It doesn't look like it here because of the angle but the top of my brooder, which is also the dropping board, is about 4' off the coop floor. The roosts are about a foot above that or five feet. That outside tree limb is back about a foot from the edge of the brooder.

Some of my full sized fowl birds fly directly to the roosts from the coop floor and some fly to the top of the brooder and then hop on up. My nests (not shown) are on a wall to the left with the top around two feet high and maybe three feet horizontally away from the roosts. Sometimes some birds go to the top of that and fly over to the brooder or roosts. Most fly directly down to the coop floor from the roosts. Sometimes when my human door to the run is open a bird launches from the roost, flies about 8' forward, hands a 90 degree left, flies out that human door, and lands in the run. I had a fully mature full sized rooster do that once but most of the time it is a hen, often a pullet.

My poop board is about counter height... 3-3.5ft off the ground. The roost is 8 inches above the poop boards. There's about 6ft of space in front of the poop board and roosts and a 3-4" layer of pine shavings on the floor for the chickens to make a graceful landing. No problems. Even my Orpingtons and Light Brahmas make it up and down fine.
 
He's the poop boards in our turkey coop. Nothing fancy and you can kinda see how high up they are. About waist high.

This shows the entire building process of our chicken coop but it's the best way to show how high our poop boards are. We eventually added a ramp to the lower of the two so that everyone could get up easier without jumping.
