The genetics of the fowl don't change from early to late hatch, but the growing conditions do change. It is the environmental conditions that are influencing size, if there is a difference in offspring from the same broodfowl. If you want to influence size based on the genetic influence, you will need to raise a bunch at the same time and pick the biggest or smallest, whichever you prefer.
Ahhh ok, so just because I raised one late in the season, say he cocks out at 4lbs, use it as brood material, doesn't mean he's going to produce offspring that'll cock out at 4lbs too.

Correct. It is not all or none when it comes to genetics. There will be a range. Over time you can shift that range/average in the direction you want.
