Is there a line of American gamefowl that's known for being exceptionally good flyers? ///
They are all capable but none fly very often. Usually the skittish of the bunch are the best. They are marginally better than layers at evading predators if that's what your looking for. They'll get eaten too it may just take a little longer.

I'm actually researching looking for my first game stag... My mug/Saipan cross hens fly alot and I would like there offspring too also, it's very entertaining watching them fly across the yard then up into trees 15-20ft// I don't think mine are scared necessary, they aren't trying to get away when they fly, they are just doing there thing

Well if you get a "game" stag u got about 6 months of entertainment before he'll need penned. The hens fly better. Some I've seen fly over 80 yds while gaining elevation and land 30 ft in the trees. I have birds flying and running all over so I don't even notice anymore.
 
I had a Hamburg that flew around better and more often than any game hen. Wood ducks are good flyers lol
