Waffle House blanches their World Famous hash browns 24 hours prior to serving them.Cut up/shred the potatoes and soak in cold water for a few hours. Drain them. Hashbrowns squeeze the water out of them. Which ever one put on clean dishtowel or paper towels, just want to dry them a bit. Hashbrowns ready to cook and serve. French fries are fried once with the oil at 300 drained, put on more paper towels, the fried again at 375.
