:thGot up 4:30ish to take care of chores (Some) & Hubby says I can take a Connie Day! As long as he gets cookies made

We cured a pork belly. It was turned once a day in the refer for 8 days. Washed it off, dried it off & rubbed it with light brown sugar.

Brinkman water pot smoker. Water pot filled with water, apple juice, apple wedges and a tad of onion. As the Bacon slowly smokes for about 8 hours, all the juices will drip into the water pot. Meaning.. the caramelized brown sugar drips into the hot water creating a sweet and sticky steam. The bacon crust will be incredible later today.

DH starts the Smoker with Kingsford charcoal. Pours it onto hardwood to get the hardwood started. Today we are using 2 kinds of wood. Hickory which is plentiful courtesy of Hurricane Irma and a little Pecan wood to add a sweeter taste to the Hickory. To kick up the smoke periodically, we beat the tree rats to a bunch of the Hickory nuts that fell in the fall.

Put the lid on the smoker and monitor the heat and water, then just smell pork smoking for hours on end.
