Had taste for potatoes, so made these, and also made Mexico rice. Right now cant seem to find that pix of rice.
These are Yukon gold, (with skins on them) with some red onion and assorted seasonings. Fried in EVOO.
In this picture, they are almost cooked. I kept tossing them around for another 10, and then covered skillet with cover.
