I wish we had a good Chinese restaurant in town. The one that was here closed, which is ok, they weren't very good. They advertised their food as being MSG-free but the one time DH and I ate there, we both suffered severe side effects. DH suffered gastrointestinal problems and my eyes swelled up like golf balls. :hmm
That is too bad. We have several good Chines restaurants here. There a lot more Mexican restaurants.

There are several Mexican restaurants and a sprinkling of fast food and a Thai place (DH detests Thai so that's out).

When we lived in Key West they had one Chinese place in particular we loved. We ordered delivery so many times from them, the delivery man would show up at our door with the food and say "Ah, it's you, it's you". That was about the only English he seemed to know :lol:

This is my favorite recipe. I substituted the 1/4c sugar in the recipe for brown sugar and the other 2c was white. The last time I made them using all white sugar they were fudgy but lacked the "crunchy" top layer. They are all gone today! Family enjoyed! Post if you end up making these!

Question:
Does anyone put mayonnaise in their cake batter to make it more moist? If so, how much do you use & do you alter the other ingredients in any way?

I never have pudding packs here so that's not an option.

I have a mayonnaise cake recipe somewhere!

The mayonaise take the place of oil, eggs and vinegar in the recipe. Figuring out the amount to use is the tricky part.

Chocolate Mayonnaise Cake

Ingredients
CAKE:
  • 2 cups (256g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 6 tablespoons (44g) cocoa powder
  • 2 teaspoons baking soda
  • 1 cup (237g) water
  • 1 cup (232g) mayonnaise
  • 1 teaspoon vanilla extract
FUDGE SAUCE:
  • 3/4 cup (179g) heavy cream
  • 1 cup semi-sweet chocolate chips 6 ounces
  • toasted walnuts optional
  • vanilla ice cream optional
Instructions
CAKE
  1. Preheat oven to 350°F. Grease a 9x9 inch baking pan.

  2. Whisk the flour, sugar, cocoa powder, and baking soda together in medium mixing bowl. Add the water, mayonnaise, and vanilla and mix until evenly combined.

  3. Pour batter into the prepared baking pan. Bake for 25-30 minutes or until toothpick comes out mostly clean.
FUDGE SAUCE:
  1. Place chocolate chips in a bowl. Heat whipping cream, pour over chocolate chips, and cover. Let sit for 5 minutes and then whisk until smooth.
  2. Serve cake warm or reheat. Spoon fudge sauce on top of cake, sprinkle with walnuts, top with ice cream. Serve immediately.
