My dinner wasn't photo worthy but my folks had KFC tonight. My dad will be 89 next week.

Change of plans...bbq'd steak, jumbo shrimp and mushrooms with a corn pudding and honeydew melon tonight. We have two big steaks so one will go sliced in a salad tomorrow night with some garlic bread on the side.

How do you make the corn pudding IM?

I made bread and coffee ice cream, and then bread pudding. I’ll be making more ice cream tonight.

How do you make the corn pudding IM?

Super easy, it's Mexican cornbread or cornbread casserole or whatever, I said wrong thing.

8 oz container of sour cream
1 stick butter softened
1 box Jiffy Corn Muffin mix
1 can cream style corn
1 can corn drained

Mix and Bake 350 about 50 to 60 minutes. I use a casserole dish.

I add a can of rotel or some green chili's or sometimes a roasted pepper, either a poblano or a red bell pepper.

We've also enjoyed it with some bacon and onions cooked and then baked in it.

The vanilla ice cream is being made right now. I had intended to make peach ice cream, but forgot until I started the machine. I went to find my canned peaches, and found apple pie filling. Suddenly I flashed back to a better place, and Pierre apple pie ice cream. I was grinning at the guy I was dating, and secure in his love. Ahhhh, memories!
I suppose it’s not too late to make the pie crust, and do it as a mix -in.
