What kind of seafood is in your curry? I make coconut curry chicken for hubs and he loves it.

I just used Imitation crab and cheap pre cooked shrimp to save money but when I splurge I do high quality shrimp and Scallops. I use heavy cream instead of coconut milk. This is my own recipe and every time I make it I make it slightly different than I did before. I was supposed to use Chicken but I wasn't in the mood to dress out a cockerel today.

Interesting combination. I like using Thai yellow curry paste and always thought it would be great for shrimp but wasn't sure whether to use cooked shrimp or not. I was thinking cook separately for better flavor.
