Hummus
2 c. cooked chickpeas
6 T. tahini
3⁄4 c. water
4 T. olive oil
3 cloves garlic, minced
1 red onion, diced
1 red pepper, diced
1⁄4 c. lemon juice
1⁄4 tsp. Black pepper
1 tsp. Paprika
1 tsp. Cumin
Salt to taste
Combine all ingredients in food processor for 10 minutes or until creamy. Add water a little at a time to desired thickness.

I always use canned chickpeas. Dry chickpeas don’t blend as smooth. Use fresh garlic (not jarred). And use a good tahini brand.
 
Of all the store bought tahini, I like this one best.
