My wife makes Chèvre and Mozzarella. The Mozzarella recipe she uses only takes 30 minutes.So far my efforts have produced 2 wheels of cheddar (currently in the wine cooler for the next few months) and a batch of Juusta Liepa finnish cheese. Non-homogenized milk is best for making cheese, but the closest place to get it is a natural food store an hour's drive away, and it is expensive there (kind of a high-dollar health food place). My next try is going to be Mozzarella, which you can make with store-bought homogenized, pasteurized milk (you can not, however, use ULTRA pasteurized milk to make cheese). It is really interesting, wish I could get some goats milk and try Chevre and some other fresh cheeses.
