I think I'm confident enough that the first three are girls to sell them as girls on the internet now

You don't Rocks at all then. You'd essentially have hybrids "crossbreds". The APA standard calls for yellow legs, anything else would disqualify them for Plymouth Rocks.

I have a light brahma, 8 weeks and it's making little cockerel noise but no saddle feathers

Brahmas are a slow maturing breed. You have to give them more time before the saddle feathers come in. 12-16weeks usually.
