That's smart! Nitrates and nitrites aren't really good for you. You're using your head if you can't raise your own pork. I've been cooking with rendered lard for over 50 years and as far as diabetes, heart disease, clogged arteries, I'm healthy as a mule. Veggie fat is bad for you and Dr's are finally starting to admit it. Whether it's butter or lard, both are more easily digested that veg oil. And they tend to have more of the healthier cholesterol. But like I said earlier, everything in moderation. Too much of any one thing is always gonna be bad for you.
