The writings about head cheese, pigs feet and etc. has me appreciating my sheltered life. My mother was 100% Norwegian and grew up on a farm in NE North Dakota. She did not like these foods for the lower classes, and thus we were never required to eat or even taste them. No head cheese, no pigs feet, no Lutefisk and etc. I can say I do not miss that experience.

I feel sorry for you, we will need to start you on a heritage appreciation program.

Let’s start by finding you a traditional lutefisk supper.

I am afraid head cheese would be addicting to you and drive the price of headcheese through the roof.
