Hello, I was wondering if anyone had ever tried curing sweetpotatoes in a clean incubator? I have one that is large and I can set the humidity and temperature to the curing temperatures. I live in the Midwest and it's cool outside right now so it's hard for me to find a way to maintain the higher temperatures and humidity in a room to cure them and I was thinking that an incubator might work?
 
Curing sweet potatoes really does improve shelve life and flavor of potatoes. Try to store immediately after digging in a place with 70-80 percent humidity and 70-80 degrees of temperature. You will be pleasantly surprise in the improvements.
