100 day old eggs, and like black gel inside. That's a strong immune system.

Pink eggs are died pink to indicate they are 100 day old eggs... soaked in salt and clay for 100 days... they will be like a black gel inside. considered a delicacy in that culture.

Well, I thought about it a bit and 100 days is really not that long, just over 3 months. Almost 7 months is probably pushing the limit for me. There is a thread on here talking about storing eggs for 9 months.

I want to try salted eggs. Not the 100 day eggs. They are salted in brine and organics... for at least ten days. Then hard boiled. We have a history of it here in the US... pre refrigeration and other preservation techniques

Coated in oil or beeswax they keep for a year. Don't wash, keep the bloom on and coat them in oil/molten beeswax and then put them in layers of damp sand. Keep at cool temps (68ish). You can stick them in water to check if they're still good. A good egg will sink or hover above the bottom. Top floaters are BAD.

They're not black gel
