Well, first off, your rooster has a single comb, they should have pea combs. They are also not a standard color for Amercuanas, but that hen sure lays a nice blue egg though.
Because your rooster has a single comb, he only has about a 4% chance on carrying the blue egg gene, the pea comb and the blue egg genes are very close on the chromazone.

So crossing a white egg layer with a green or blue will give stronger colors?

I think it actually has to be a blue egg layer, a purebred araucana or amaraucana crossed usually with a leghorn, but I think any white egg layer will work.
