The Old Folks Home

I lost a cat to cancer because of cheap food. Sadly though with 6 dogs, with two with allergies so They get the special stuff and the other ones get less expensive food but my cat gets the best.

Random note any oldies with tattoos here..?

Spent most of today in an unheated garage with 2 hanging pigs, a ton of buckets/bowls/etc, a grinder and 2 foodsavers.

The 5 of us made pretty quick work of the pigs. Our pig netted us an entire box of delicious pork cuts and about 40 lbs of sausage. We have some bones for soup and I saved the white, clean fat to make suet for the birds (currently in the crockpot).

It was quite a process... this was my first pig. It was freezing. I was the first one to be injured (of course... but not the last, thankfully). We split and seasoned the sausage 3 different ways (sweet italian, hot italian [which isn't very hot] and a regular sausage mix) and with each batch cooked a little of our mixture to ensure it was good before packing it.

It was better than good.

Keep in mind I haven't eaten meat that I haven't raised and/or killed (if wild) since 2002. So, I've pretty much been limited to poultry and game. I tasted the first spoonful of fried sausage and almost keeled over in delight.

I might have eaten an entire pound of sausage for dinner.

Unfortunately not. I ended up stopping at Hussey's General Store ("If we ain't got it, you don't need it") on the way there and picking up the 3 spices. I lost an entire day Saturday so my planning was a bit shoddy.


Maybe next year. Did you send in a leg to be smoked into a ham? Ham from home raised pigs is to die for!
 
We are having fresh turkey had one at Thanksgiving ate the whole 32 lb bird
was so good to the last next is the other it is a hen again 34 lbs but other Son
and his Wife will be here also

not too thrilled but oh well
they complain about everything nothing is ever done right according to them
first time they have had been to our new place glad they cant stay long
and all rooms are full
