Just because you pour a custard or pudding in a pie plate does not make it a pie. It is still a custard or a pudding.Since I went GF, I can't eat them anyway. They're for DH. I'd rather just make the filling and have a crustless pie.

Actually, I gave up. So, yeah, you're right. I had lemon curd with meringue on it in a little ramekin last night for dessert. DH had lemon meringue pie.

Gingersnaps as a crust sounds wonderful to me. Not 100% sure about the walnuts, though.No way to both ideas.
