Sure there are clean cooks, but just because they have government approval means nothing. They are huge companies, and so many of the people that work for them could care less if they pick their nose, a wedgie or pop a pimple (yes I've seen teens do this) and then continue to cook without washing their hands. When I say teens I mean 18-19 because the underagers could not do the cooking. I would say something but they would just shrug and think it funny. The managers didn't really care either. Some would really get upset, but nobody was ever fired over it. I prefer to buy from home kitchens because knowing directly where the food comes from I have found generally makes people more accountable to be careful. If you are serving 100's of people a day that you don't know, and McDonalds, or Burger King or Golden Corrale gets sued because you made a mistake, well it doesn't bother that worker much. Or they may never know which worker it was that could have done it. I just don't see much accountability on an individual basis in large establishments. Each worker has their own standards regardless of government regulations. Sure they may get fired but they'll just get another job, probably in food service and keep their bad habits. I can barely bring myself to eat at restaruants anymore because I know what those cooks/servers do when alone and it's DISGUSTING!!! Just because they are inspected doesn't mean they are clean regularly. And your cakes would probably be cleaner and you would take more pride and be more careful than many hired help. Not all, I don't mean to imply that, I am sure there are some workers that are very responsible. But just because their are inspections/regulations does not mean your food is safe and clean or that the individual preparing it is.
