As far as possibly breaking his legs, try to find a way to put pressure on the leg to go the right way, but not just immediately straighten it out. I like the idea of paperclips, if you can protect him from abrasion. If you are willing to have a pet that isn't 100%, then do your best to get one good leg, its quite possible that he'll deal with it and be able to use the really crooked one adequately.
For food and water, put him in a small container, near food and water and keep an eye on him. He's got a couple of days before he actually needs to either eat or drink, but I find they do better when they start eating and drinking earlier. Be sure his water isn't something he can blunder into and get wet and chilled. I had a duckling do that when I first put it in the brooder and had to pop it back into the incubator for another few hours until it was all warm and happy. It did fine. You will probably have to help him with food and water at first, so use your couple of days period to work that out.
Is he strong enough to hold his head up and try to move?
