Today's Menu and Baking Thread

Okay....I'm gonna plan two days. Today is going to be meatloaf and tomorrow pulled pork.

Someone wanna edjikate me on how to make meatloaf? If I recall there is hamburger, croutons, and eggs in it but I don't know how many/much of each.

Yeah, I'm a PITA newbie.

Here's my favorite meatloaf recipe

2 T olive oil
1 large onion diced (I like to use a sweet onion)
1 tsp. dried thyme (use fresh if you've got it)
2 tsp sea salt
1 tsp. pepper
3 T Worcestershire sauce
1/3 cup chicken broth (I usually use 1/2 tsp boullion in 1/3 c water)
1 tsp ketchup
2 1/2 pounds ground chuck
1/2 cup plain bread crumbs
2 large eggs beaten.

Heat the olive oil in a pan. Add the onions, thyme, salt & pepper and cook over medium heat until the onions are translucent and cooked down. Off the heat add the Worcestershire, chicken broth, and ketchup. Allow to cool a bit. In another bowl combine the meat, bread crumbs, and the eggs. Add the onion mixture and mix well. Shape into a loaf and cook at 350 until center tests 160 degrees.....about 1 to 1 1/2 hours.

I was going to make pulled pork, but I found some 1-1/2 inch pork chops, so I will make some stuffing and do stuffed chops, bread rolls, home canned applesauce and a salad.
Poke cake for dessert.
