Vegetarian & Low Carb Recipes And Discussion

Yup. 8g of carbs per serving and 3g of that is fiber. 2.5 servings per big bar. 2 squares knocks a craving dead in its tracks.

Freaking awesome. Is there a brand that you buy?

Also, how come the "CarbSmart" ice cream that I buy for my daughter figures "net carbs" at 4g per serving, but when I look at the label, I figure ECCs at 9g per serving? What are they subtracting? Because me, I would like to have some of that ice cream, but not at 9g per serving.

What is a mozzarella salad? I love mozzarella cheese

Anything you want, really, but the most common, I think, is a combination of fresh mozzarella knots, fresh tomatoes, basil, olive oil, and balsamic vinegar and salt & pepper. I don't like tomatoes, though, so I usually go with a kind of antipasto with mozz, sweet peppers, artichoke hearts, olives, and maybe pepperoni, depending on my mood.

I got some organic Yukon Gold seed potatoes in the mail that I'd ordered and forgotten about months ago. Since I won't be able to use them now, I traded them for some fresh raw Guernsey milk. Yummy mozzarella fresca, here I come!!

Purple are you able to eat any fruit ( sorry I didnt read the whole thread) I know on some low carb you can eat fruit depending on what you eat it with. One of the things I eat is Strawberries that I hull and then mix cream chease with stevia or splenda or whatever sug sub you use. I stuff the
hole in the top of the strawberry with the cream cheese. Very tasty and satisfies those sweet cravings. Also very portable, I put a few in a small tupperware container for an afternoon snack.

One of the things I really for sweeting is Liquid Stevia, the brand I get has regular and also flavored types. I have lemon, orange and chocolate raspberry. I use them in my plain water to make it more palatable as I hate drinking plain water. I also flavor the cream cheese with them, put them in tea or coffee, yogurt, protein shakes, etc. I get it at a local health food store but you can buy it online at www.sweetleaf.com. Good stuff... and one bottle lasts a LONG time. The above strawberry snack I used the lemon... very tasty.

You can throw in a bit of sausage in the mix, pepperoni would be good or summer sausage. YUMMY!

Nancy, those berries sound yummy. Oh yeah, I can eat anything in
reason and limited fruit is up there on the list. I eat or juice an
apple and pear daily plus an organic fruit snack in the van. I also
allow myself one 16oz serving of soda.

Now that I'm watching the carbs I realized how much I used to eat. I'm
estimating I ate 500 to 1000 mg of carbs daily. Now I'm shooting for
200 while upping my intake of fruits, vegies, nuts, beans, and other
whole foods.

Another thing I'm focusing on is increasing my intake of Omega 3
(something I already took daily), potassium, magnesium, among other
nutrients.

Rome wasn't built in a day. I'm pretty happy so far after just a week.
