So the daughter likes mac & cheese, and I HATE that processed stuff... so, I also create my own.
This is what going on for tonight.
Ingredients:
1 medium onion chopped
1 Large carrot shredded (or 1/2 of the pre shredded stuff)
1 clove of garlic (chopped or minced)
1/4 lb of fresh baby spinach (I'm using from my garden as its ready, you might wanna buy the bagged stuff, use more or less to your taste)
2 tbsp olive oil
1 Bag of the No Yolks Noodles
2 Tbsp flour
2 tbsp butter
1 cup of organic milk
1 cup of plain yogurt
1/4 cup parmasean cheese
4-6 oz of chopped/cubed cheddar or american cheese
Salt & pepper
In a pan on medium heat, warm the oil and add the onions, carrots & garlic. Will need to cook about 15-20 minutes. Get 'em soft. When that is about ready cook your noodles as directed on package. Drain and set aside when ready. In a small sauce pan melt butter & whisk in flour until it clumps (this is your rue for the cheese sauce) then add milk and yogurt. Get to a simmer and then whisk in cheese until melted. Salt and pepper to taste. In your pan of veggies, put in spinach and when it begins to wilt (happens quickly) pour cheese mixture over that, and then toss in noodles and serve warm.
If it seems too thick, add a bit more milk 1 tbsp at a time.
Mine isn't even done yet... but the kitchen smells awesome!
