I myself like the idea of cracking 1 egg per hole into a muffin tin.
Just freeze in the pan till firm, and then transfer to a ziplock bag.
I think whipping the egg up before you freeze would be a good idea.
I don't freeze eggs as my girls keep me well supplied.
 
My main group is 29 hens and I recently added 16 more adult birds that I
bought at $ 2 each as the lady who had them needed to sell off her flock.
All I am doing right now with the second group is getting good feed into
them, but no layer mash. My main group is anywhere between 15 to 21 eggs
per day. I do in the good weather take the eggs to a farmers market  1x a week.
I had to get my price to $ 4 a dz to cover the grain costs and my extra gas.
In the winter, I can go to that market but it is weather permitting.
I used to give away a lot of eggs, especially in the winter.
If I have extra eggs, I will sell to a couple of neighbors at a better price.
I do have one customer who will buy 10 dz at a time if he gets a DEAL.
 
My eggs are brown, and I have 1 green egg layer in my main group.
Red sex link, buff orpingtons, delawares, and the 1 ameracauna.
Second group has 3 ameracaunas, 5 black star, 1 delaware, 5 red wynadottes,
2 black/white wynadottes. We have 3 roosters currently.
