Here it is....Thai Curry Rest-yippee
1 tbsp Mae-Ploy or A Roy D Yellow Curry Paste (asian section grocery store...comes in a white plastic cup)
2 tbsp water, mash into paste
Put that in HOT oil. 2 tbsp...or more if you like.
If you have chopped onions or shallots...add that. If you don't have that, no worries.
Add one smashed up lemon grass stalk if you have one.
When it smells really good (1 min to 2 min)
Add meat.
let that cook a bit...then add
1 can coconut cream
1 can water...or some kind of stock
add vegetables etc. Just add what ever you have in hand.
Bring the whole thing to a boil adn then let it simmer until you are ready to eat it.
If you have "fish" sauce, you can add a tbsp...or you can add soy sauce or just salt.
The rice I brought is Jasmine rice.
If you like coconut rice, you can sub 1/4 cup of coconut milk/cream to the rice when you cook it and a pinch of water.
If you add pineapple chunks to the rice...you'll have pineapple rice.
