Supposed to be Lavendula officionalis (that particular strain of lavender). There are probably others.

They sure would! I prefer trios so if one dies, the other isn't alone, but for purposes of housing I have done two before or even one (not ideal.)

Technically, two would be fine, but in a more practical sense, you'd be prudent to have three--just in case--you wouldn't want one little ducky all alone.
