The grandfather of a friend of ours has a long standing arrangement with our local grocery where they give him produce that would otherwise be thrown away. He brought us by a huge crate of bananas that were too dark to sell. When peeled thought they were still in great shape.

So I made 18 pints of Banana Jam with them instead of giving them to the hens. It is delicious, I always add a generous dollop of Amaretto right before I fill the jars.

I think using rotten apples for pie is a splendid idea. I, and our fore-mothers, salute your thriftiness, PW_Quiltworks!

OMG! Banana Jam w/ Amaretto? That sounds reeeeeeally good!

Oh! Forgot the purpose of this thread... Lemon cream pie and lemon cookies (try to do all my zesting at the same time). The cookies are the first on a long list of holiday goodies that will be made for x-mas giving. I prepare all the doughs that freeze well first. I never wait till X-mas to start giving them out though. It's too much stress, so I space it out through the month. The lemon cream pie is simply a lemon bar recipe with cream cheese added. Pour into a store bought graham cracker crust (sorry, I do cheat a little here and there).

I am making these right now!! They are great and can be made a day or two in advance, just put them in a ziploc bag to keep them from drying out.
